The majority of French dried sausage production comes from
the Lyonnais region, an area rich in pork, where they produce such delights
as the Rosette, the Lyon and the Jesus.
You will hear everyday through out the summer months on the Montalivet Market,
the Filipozzi family's vendor cry of either: " Le saucisson de regime",
"Le regime du porti feuille" or the ring of the bell. This banter
will signal you to their stand, where you will find tasty dried sausages including:
Saucisson Lyonnais: Natural, Noisettes, Cendre, Sanglier,
Duck, Olive- Vin, Cheese and the Cepes.
